buffalo meat
Water buffalo meat, known in Nepal as “buff” and used for momos, choila and dried meat: dark red, lean and full-flavoured.
This means water buffalo, not the North American bison that is often also called “buffalo” in English. It is sold by farms that keep water buffalo for milk, at farmers’ markets, by some butchers to order, or by mail order, usually frozen.
Substitute:
Lean beef is a good substitute, though slightly fattier and milder; for minced fillings such as momos use lean ground beef, for dried meat a lean braising cut. Bison is also close to water buffalo in leanness and flavour.
