Goat offal

The internal organs of the goat, such as liver, heart, kidneys, lungs, stomach and intestines, stronger in flavour than goat meat.

Goat offal is most likely found at Turkish, Middle Eastern or African butchers, often only to order, sometimes frozen in Asian grocers or directly from goat farmers. Lamb offal is the closest substitute, a little milder but very similar in texture and cooking time.

Substitute:

Lamb offal is slightly milder in flavour but behaves almost identically in cooking. Beef or pork offal is coarser and different in aroma and works only as a last resort.
