The small, nutty, slightly grassy seeds of the hemp plant, in the Himalaya usually toasted and ground into pastes or chutneys.
Hulled hemp seeds are sold in health food shops, organic stores and many supermarkets, while whole unhulled seeds, which Nepali cooking toasts and grinds, are easier to find in health food shops or online. Hulled seeds are softer and milder, whole seeds taste stronger once toasted and give a paste more texture.
Toasted sesame seeds make a similarly nutty, oily paste, but lack the faintly grassy note of hemp.
