dried porcini

Dried slices of the porcini mushroom, soaked before cooking, with a strong, nutty, earthy flavour.

Dried porcini are sold in many supermarkets, otherwise in delicatessens, at markets or by mail order. They are soaked in warm water, and the strained soaking liquid, which carries much of the flavour, is used as well.

Substitute:

Other dried mushrooms such as shiitake or mixed dried mushrooms will work, though they taste less nutty and either smokier or flatter; fresh mushrooms give far less flavour.
