Soybeans

Dried yellow soybeans, round and hard; nutty and crunchy when roasted, firm and mild when cooked.

Caution: Raw soybeans are indigestible and must be thoroughly cooked or roasted all the way through before eating.

Dried soybeans are sold in health food stores, organic shops and Asian grocers, and increasingly in supermarkets; Indian or Nepali shops sometimes carry them ready-roasted. Look for dried yellow beans, not green edamame or textured soy protein, which behave quite differently.

Substitute:

Roasted peanuts come closest to the crunchy, nutty character of roasted soybeans, though they taste sweeter and richer. In cooked dishes chickpeas work, becoming softer and tasting less beany.
