Neutral oil in which dried chilli flakes have been toasted and left to steep, hot and faintly smoky. It is sold in Asian grocers and now often in well-stocked supermarkets.

Substitute:
It is easy to make at home: heat neutral oil until very hot and pour it over coarse chilli flakes, with a little garlic if you like, then let it cool. Italian chilli oil carries the heat but lacks the toasted flavour and the flakes.
